Everybody Loves Pizza

{ Dinner } Thu, 04 March, 2010

Family pizza night is a time-honored event all over America. It’s the Friday night after an exhausting week of work, Saturday night just because, Sunday night tradition, or any night kind of meal families are always up for. And, it doesn’t have to mean you’re giving up on your family’s good nutrition by ordering in. It’s easy to make pizza at home, especially if everyone makes their own. Purchase some frozen or refrigerated pizza dough, let the kids roll their pizza out and shape it, put out some healthy and flavorful toppers, and let them go wild. Here is one of our yummiest combinations to get you started.

Mediterrane-Yum Pizza

8 Ounces Pizza Dough

2 Tablespoons Olive Oil

1  6-Ounce Can Pizza Sauce

1  5-Ounce Jar Kalamata Olives

8 Ounces Goat Cheese

1 Yellow and 1 Red Bell Peppers, seeded, and cut into ½-inch chunks

Place a pizza stone into a cold oven and turn the oven on to the highest temperature (450 or 500 degrees).  On a lightly floured board, roll out the pizza dough (we like how an oblong circle looks, but it can be any shape). Brush the dough with olive oil and prick all over with a fork.  Sprinkle a pizza peel lightly with four and place the flattened dough on it.  Spread sauce evenly over the pizza and sprinkle with olives, goat cheese, bell peppers, and other toppings.  Place pizza in oven and bake for 7 to 10 minutes or until bubbly and golden brown.  Let rest for 5 minutes before slicing with a pizza wheel.

Other Mediterranean Topping Ideas:

3 Baby Artichokes, cooked and quartered

½ Red Onion, cut into wedges

1 Cup (4 ounces) Smoked Gouda, shredded

4 Ounces Portobello Mushrooms, sliced

8 Ounces Brie Cheese

More Great Pizza Combos:

  • Pumpkin and goat cheese with pancetta and thyme
  • Fennel and potato
  • Classic margherita pizza - fresh mozzarella, basil and tomato
  • Four cheese
  • Prosciutto di Parma, plum tomato, goat cheese and arugula
